INGREDIENTS 2 tablespoons mixed berry jam 1 cup quick oats 1 cup medjool dates, pitted and chopped ½ cup peanut butter 2 tablespoons plant-based protein powder 1 teaspoon chia seeds
½ teaspoon vanilla 1/8 teaspoon sea salt ¾ cup shredded coconut

DIRECTIONS
1 Divide jam 12 even scoops (½ teaspoon) on a plate and chill in the freezer until firm. 2 In a food processor, add the oats and pulse a few times to form a coarse meal and set aside. 3 Add dates, peanut butter, protein powder, chia seeds, vanilla, and salt to the food processor. Process until a paste forms then transfer to a small mixing bowl. 4 Stir in half the oats, adding more until a firm dough is achieved. 5 Scoop mixture into 1 ½ tablespoon amounts and roll into balls. Make a well in the center of each ball and fill with the frozen jam. Press to close and reform ball. 6 Roll balls in shredded coconut. Chill protein bites in the refrigerator for 30 minutes to firm up.
