AVOCADO EGG CUPS

INGREDIENTS 2 Small Eggs 1 Avocado Pinch of Salt & Pepper

DIRECTIONS Pre-heat the oven at 215C/425F Cut the avocado lengthwise into halves and remove the pit. If the pit is small then scoop out a tinny bit more of the avocado to make room for an egg. Place the avocado halves on a baking sheet. Break an egg in each of the avocado halves. Sprinkle salt and pepper on top and bake for 15 minutes.
